“A Culinary Heritage Unveiled”

Secret Kitchens of Samar is a landmark cultural project that maps the culinary soul of the province. Spearheaded by the Provincial Government and authored by Clang Garcia, this 5-volume book series documents heirloom recipes, forgotten ingredients, and the “kitchen heroes” who keep them alive.
The Accolade: In 2025, the series brought immense pride to the Philippines by winning Best Book Series in the World and Best Regional Book in the World at the prestigious Gourmand World Cookbook Awards in Lisbon, Portugal.
The Flavors of Heritage:
- Tamalos (Catbalogan): A rich, heavy variation of the Mexican tamale. It features tender pork belly smothered in a thick, spicy peanut sauce, wrapped in banana leaves and steamed for hours—a dish so complex it is reserved for special fiestas.
- Queseo (Gandara): The local white cheese (kesong puti) made from pure carabao milk and vinegar. It is a product of the town’s cheese-making cottage industry, offering a distinctively salty and creamy profile.
- Bola Catalana: A dense, flavorful meatloaf (embutido) distinct to Samar, baked with a unique blend of spices that traces back to Spanish colonial influences.
- Suman Latik: A sticky rice delicacy drizzled with latik (coconut caramel), showcasing the province’s abundance of coconut.
