


The rich culinary heritage of Samar stepped onto the international stage as Dioscoro โIntoyโ Doncillo, one of the provinceโs celebrated kitchen heroes, demonstrated the iconic Catbalogan Tamalos during the prestigious Terra Madre Asia and the Pacific event held this week.
Representing the Secret Kitchens of Samar, the Provincial Government of Samarโs flagship culinary heritage program, Intoy captivated delegates, chefs, food advocates, and agricultural innovators from across the region with the story, soul, and unique preparation of the tamalos, a delicacy deeply rooted in tradition, community identity, and local agricultural abundance. During the live demo, Intoy highlighted the meticulous process behind tamalos: from the slow-cooked peanut sauce base to the careful layering of meat and spices wrapped in banana leaves, echoing centuries-old methods passed down through families and barangay kitchens. Beyond technique, he shared how tamalos symbolizes Samarnon resilience, creativity, and Samarโs deep connection to its land and food producers.
The presentation also highlighted Samarโs ongoing efforts to elevate local cuisine on the global map. Through the Secret Kitchens of Samar initiative, recently recognized internationally for its depth of storytelling and cultural preservation, the province aims to promote traditional recipes, honor community cooks, and develop food-based tourism anchored on sustainability, heritage, and local pride.
